Darjeeling 2nd Flush, Seeyok Estate
Darjeelings are standouts in the black tea category, renowned for their complex aromas and nuanced flavors. The flushes refer to the harvest: second flushes are the second hand-picking of the plants—usually in late April or early May—and the small leaves are fully withered and rolled so as to maximize oxidation.
Bright notes of citrus and almond distinguish this lot (DJ 62), from the organic Seeyok Estate. At elevations up to 5,000 feet, the garden faces the Nepal border, and also employs biodynamic farming practices. The resulting cup is full but balanced, both fruity and sweet. Try steeping with less leaf than other black teas to avoid astringent overtones.
