Sencha is a distinctive style of green tea, standing out from many others in the category. It’s classically defined by the production techniques of steaming the leaves (invented in Japan), and rolling them into pine needle-like shapes, part of what contributes to its characteristic grassy, marine and mineral notes. 

Terroir also plays an important role: this small lot hails from a high-elevation farm in the Shizuoka region, within view of Mt. Fuji. The single cultivar leaves are both kabuse (covered before harvest) and tezumi (hand-picked)—two uncommon processing steps that further enhance the flavor. Bright and smooth, with a honey-like texture, the deep, salty sweetness is reminiscent of bittersweet chocolate, and lingers after each sip. Brew with water well below boiling (140°-160° F) to maintain the tea’s balance.
