Harvested at an auspicious time—88 days after February 3rd, the first day of spring on the the traditional Japanese calendar—this green tea from Fukuoka is bursting with umami. The aroma is savory, the flavor sweet and deep with a mouth-coating texture.

Shincha, or new tea, refers to the first harvest of sencha for the season. These leaves have been carefully rolled and steamed between a chumushi and fukamushi style, resulting in the classic pine-needle shape and rich emerald color.

My poem about this tea

I am drinking a pear skin bright

cup of Hachiju Hachiya Shincha. Eighty-eight nights after

the first day of Spring, thousands of hands pluck

the first harvest. I think of those tired, nimble hands, the vibrant liquor

fresh and thick on my tongue.
