Sencha Midori
Midori means “green” in Japanese, and this tea—from a high-elevation farm in Shizuoka Prefecture—lives up to its name. Strong, verdant flavors of artichoke and crisp lettuce give way to an almost chewy texture, finishing with a deeper profile of delicata squash and 80% dark chocolate that lingers on the palate.
The leaves are shaded for a few weeks before harvest, a style known as kabuse; reduced sunlight changes the chemical composition of the plant, boosting production of particular compounds that impart savory and fragrant qualities. Brew with water well below boiling (~160° F) to maintain to maintain this style’s classic bittersweet taste. Or try a longer steep (5 - 10 minutes) with cool room temperature water to uncover more salinity and minerality.
