Strong and soothing, this traditional Indian drink can take many forms. One of the best known is masala chai, in which tea leaves and fresh spices like cardamom, ginger, or black pepper are simmered together with milk and sugar.
Even small differences in the flavor and heat of a spice can drastically alter the overall taste of a blend, so we mix new batches of chai by hand each week, and sample them regularly to ensure a consistent taste and extraction rate for all the ingredients. Our chai blends contain no sweeteners or synthetic oils, just pure looseleaf black tea or Rooibos and carefully calibrated spices. Interestingly, “chai tea” is a redundant term; in Hindi and many other languages, the word “chai” translates to “tea.”
