Welcome IPOT's newest matcha! Crafted with storied techniques, this vibrant Japanese green tea hails from the well-known regions of Uji and nearby Nishio. The leaf is carefully shaded for a few weeks before harvest, which boosts levels of certain amino acids that contribute to rich, umami flavors. It’s then slowly ground into the beloved powder, which is traditionally prepared using a unique whisking process to yield a smooth, bright, lightly creamy flavor with a beautifully fresh aftertaste.

The green pheasant or kiji that graces the tin is the national bird of Japan, and has been known for centuries as a symbol of good fortune and strength. Its emerald-colored plumage evokes the beauty of nature, and for us brings to mind a satisfying bowl of matcha.

This grade is best enjoyed as usucha, or thin-style matcha; use ~2 g (2 chashaku scoops) matcha and about 3 oz (1/3 cup) hot water (180°- 190°F) per serving, and whisk vigorously with a chasen for about 20 seconds. Experiment with the temperature and amount of water to find your favorite method.

Perfect Matcha

A really yummy matcha. Not bitter at all, warm and sweet. Great iced or hot. I’ve gotten the higher grade matcha from here too, and I’d say the only difference is this one has more crumbles that you have to sift out. I usually sift my matcha though anyway.
