The high-elevation organic garden of Jun Chiyabari, in eastern Nepal, has been making delicious, unusual teas for over two decades. Bordered by China and India, orthodox tea production in the mountainous country is relatively new; this innovative farm draws from the complete spectrum of traditional tea making, utilizing cultivars from nearby Darjeeling and processing techniques from Taiwan and Japan.

This exquisite lot of its white tea is comprised of large spring buds and top leaf sets, harvested by hand in mid-spring. A simple process of air drying allows minimal oxidation, preserving the fresh, soft nature of the leaves alongside a floral and vegetal fragrance. Light spice notes of white pepper and citrus round out the cup, which offers a clarifying sip at any time of day.

To highlight white tea's natural sweetness, infuse with water below boiling (180°-185°F). Try several infusions, increasing the steeping time on each subsequent round.

Is this Jun Chiyabari?

The description *implies* that it is. And yet, this white tea, unlike other Jun Chiyabari white teas, does not have a soothing effect at all. In fact, quite the opposite. The bag doesn’t actually say it’s Jun Chiyabari, so maybe that’s why.

Can I ask how you brewed this tea? Though white teas tend to be soft and subtle, they aren't always, and when pushed hard some can be downright feisty. Generally we recommend a lower brewing temperature (about 180F) for this tea, and perhaps to brew with the lid off your pot or strainer. This will allow you to steep for a longer time without developing harsh flavors in the tea. Subsequent steepings will also be softer and more mellow.
