The high-elevation organic garden of Jun Chiyabari in eastern Nepal has been making outstanding teas for over two decades. Bordered by China and India, orthodox tea production in the mountainous country is relatively new; this innovative farm draws from the complete spectrum of traditional tea making, utilizing cultivars from nearby Darjeeling and processing techniques from Taiwan and Japan.

This lot of its white tea has been aged on site for one year, as the farmer prefers for a more complex flavor. It’s comprised of large spring buds and top leaf sets, harvested by hand in mid-spring in 2025. A simple process of air drying allows minimal oxidation, preserving the soft nature of the leaves and a sweetly herbaceous fragrance. Refreshing notes of cucumber, watermelon rind and buttermilk are matched with light hints of white pepper and lemon, offering a clarifying sip at any time of day.

To highlight white tea's natural sweetness, infuse with water below boiling (180°-185°F). Try several steeps, increasing the steeping time on each subsequent round.
