Huo Shan Huang Ya
Sweet and bright, this yellow tea from Anhui, China, makes an uplifting cup that belies its rich history. Hand-picked in early spring, the tender buds and young leaves are pan-fired to almost halt oxidation, then are carefully finished over a low charcoal heat. This ancient method of processing is not common today—due to the time and skill it requires—but this style has been revered for over 1,000 years as an imperial tribute tea.
Note the sweet fragrance of grilled artichoke, roasted peanuts, green beans from the infused leaf, and clean, lightly nutty flavor with an undertone of fresh spring vegetables—think honeydew sprinkled with white pepper. It’s similar to a Chinese green tea, but with a smoother finish.
