This oolong is grown at elevations around 2,500 feet, in Nantou County, Taiwan. The leaves are medium oxidized, in the more traditional Tung Ting style, and finished with a careful charcoal roast. When infused, the tightly rolled balls unfurl with a mouthwateringly sweet aroma of flowers and fruit; the balanced flavor is positioned equally between a green and black tea, with a thick, brothy mouthfeel.

A luminous amber color and pleasant aftertaste linger through many infusions; note how the roasted fragrance grows as the leaves open.

Earthy but not Simple

I am not really a tea connoisseur, just looking for something more complex and fragrant than the "same old" store brands. Tung Ting makes a pleasant cup reminiscent of the forest with floral highlights. It is delicious any time of day, but would be a particularly cozy way to start the morning. The complexity of this tea makes it a little difficult to judge how much leaves to use for a cup -- so everyone will have to experiment -- but it is worth it to find that balance that works for your personal palate.
