This oolong is grown at around 4,000 feet, on Big Wheel Mountain in the Shan Lin Xi region of Taiwan, by an award-winning family of tea producers. The large, hand-picked leaves are medium-oxidized, in the classic Tung Ting style, and finished with a few rounds of traditional charcoal roasting. When infused, the tightly rolled balls unfurl with a mouthwatering aromas of roasted peach and juniper; the well-structured flavor is positioned equally between a green and black tea, with a smooth, silky mouthfeel.

A luminous amber color and pleasant aftertaste linger through many infusions; note how the roasted fragrance grows as the leaves open.

Earthy but not Simple

I am not really a tea connoisseur, just looking for something more complex and fragrant than the "same old" store brands. Tung Ting makes a pleasant cup reminiscent of the forest with floral highlights. It is delicious any time of day, but would be a particularly cozy way to start the morning. The complexity of this tea makes it a little difficult to judge how much leaves to use for a cup -- so everyone will have to experiment -- but it is worth it to find that balance that works for your personal palate.
